Benefits of our unique wash-only process - or how saponin is removed matters
Some varieties of quinoa have bitter tasting compounds called saponins in their seed coat which protect the seed from being eaten by birds. These compounds are normally removed to make quinoa palatable.
Inca Organics removes the saponin using a 3-step washing process, developed by Hansjörg Götz. Other producers remove saponin using mechanical abrasive/polishing methods. This is an important distinction as our wash-only process preserves vital nutrients that abrasion methods can remove.

We take quality and safety standards very seriously. When you purchase organic quinoa from Inca Organics you do so in total confidence that the quinoa delivered to you is certified organic and GMO free, as well as having been processed in plants that comply with Good Manufacturing Practices under the precepts of HACCP (Hazard Analysis Critical Control Points).
Dr. Michael Koziol, head of product quality, oversees and verifies each step of our quality process and product testing. He was certified in the implementation and verification of HACCP plans by the University of Nebraska and the Food Processors Institute (Washington, DC).
Our supplier relations representative, Octavio Guadalupe, handles issues of day to day compliance, inspecting the facilities of the farmers' cooperatives and verifying their adherence to standards. Learn more about Octavio.
Supplier Qualification: To be approved by Inca Organics as a supplier of organic quinoa, a farmer's
cooperative must complete our intensive questionnaire. After receipt of the completed
questionnaire and copies of the relevant supporting documents, representatives of Inca Organics inspect the candidate facility, auditing procedures and documentation, before approval is granted.
Quinoa Processing: From reception of the quinoa harvest to final packaging of export quality quinoa with a minimum purity level of 99.98%, there are more than a dozen processing procedures that are performed by technicians, specialists, inspectors and independent testing agencies.
Testing & Specifications: Every lot of quinoa is analyzed before leaving Ecuador. Each lot is sampled at random by an independent professional, and the samples sent to a laboratory certified to
ISO 17025 standards and registered with the Ecuadorian Accreditation Agency (OAE - Organismo de Acreditación Ecuatoriano); counter samples are kept at an independent facility. Thus, sampled bags will bear a label attesting to the removal for quality control analyses. Laboratory results are sent to Dr. Koziol for review. If the samples meet Inca Organics standards, the lot is approved for shipment.
